A Sicilian variety, John fell in love with during vintages in Sicily, 12 years from a handful of cuttings to get this wine into bottle.Only 48 dozen produced!
Hand picked fruit was crushed, de-stemmed, chilled followed by gentle air-bag pressing. Free run juice settled and racked with some of the lees returned to the clarified juice to offer richness to the mid palate.
Aged for 12 months in old French oak, adding texture and complexity which will increase with age.
Full bodied western Sicilian variety with flavours of citrus fruits, apple and almond.
A great wine to serve with any food, but shines with cheese platters, any vegetarian option and also chicken dishes.
Alcohol 13%
