By Jingo! 2011 Nero Rosso
The 2011 Nero Rosso is a blend of Italian varieties, 35 % Montepulciano, 33% Mourvedre, 15% Grenache, 10% Shiraz and 7% Zinfandel. Sourced from the By Jingo single vineyard at Mt Barker and Grenache and Shiraz from McLaren Vale.
The fruit was hand-picked, crushed, de-stemmed, chilled and cold soaked together for 4 days, with approximately 5% whole bunches of Montepulciano in an open fermenter.
Naturally occurring yeasts initiated fermentation which lasted 6 days with extended maceration of two weeks followed by pressing in a traditional upright basket press, free run and pressings were combined. Apart from minimal SO2 at 100/32ppm, no additives were used in the production process of this wine which remains unfiltered and will require decanting.
The wine then was put in French oak Hogs Heads for 3 months.
The 2011 Nero Rosso has strong savoury tannins, the small additions of Grenache, Shiraz and Zinfandel allows for an intricate weaving of berries, rhubarb and beetroot.
